Commercial Sustainability

Great, practical short interview with the owner

of the Bijou Cafe in Portland, Oregon,

on the matter of commercial composting,

particularly concerning the food industry.

This film is another from the brilliant CookingUpAStory,

produced by Rebecca Gerendasy.

It’s easy to see that with a little creative thinking,

composting in commercial places

can become a reality.

Sometimes it’s simply just a matter of

spreading the word, and

changing the perception of something from can’t do, to can do.

Very interesting. As ever it is a matter of getting people to realise that it takes no more effort to separate the ‘raw’ food for composting than it would to put it in the trash. We are trying here, on the estate I live in, to get folk to compost – bit of an uphill struggle oddly, but we are getting there.
Yummy stuff makes yummy compost to grow yet more yummy food in :o)

That’s true, Jill. It’s sort of like a little shift, but it feels maybe too complicated for folks. But it really isn’t! Sounds good what you are diong in your area. Compost is awesome, isn’t it, they call it “black gold”.

    Lori, totally true.

We’ve been composting for a while: I can’t even imagine the amount of stuff that a restaurant can produce in one day. It’s great to see that someone is taking the lead on it, though.

It is good news, Joanne. Once you start to see compost at work, there is so much logic in it, it’s astonishing. The process that happens is pretty amazing to watch.
